Brownie Cookies/Ice Cream Sandwiches

Ingredients
1 box of chewy brownie mix
1 egg
1/4 Cup of oil
2 tablespoons water
Preheat oven to 350 deg. Mix all ingredients together. Make ping pong size balls out of dough. Bake for 10 -15 minutes on cookie sheet. I used the Pampered Chef Scoops to make the balls. I started off with the small scoop and ended up choosing the medium scoop to make the perfect size cookie for Ice Cream Sandwiches. I made the balls and put a measuring cup on top the balls and pressed down on them to flatten them out.
*** Tip - Frozen brownie cookies aren't good, so you have to assemble the cookies when you plan on serving them. To make it easy I scoop the ice cream the day before and put the flatten ice cream scoops in a rubber made container. That actually did help.
