Rice Pudding



I just found my favorite rice pudding recipe.  I have been making recipe pudding with eggs in the recipe and it has been a real pain in the butt.  I always ended up with little bits of scrambled eggs in the pudding.  It still tasted great but it felt like a mess up.  So~  I finally found a recipe that is delicious and NO SCRAMBLED eggs.

Directions

  1. Bring rice, water and salt to a boil over med-high heat.
  2. Simmer covered until water has been absorbed (approximately 15 minutes).
  3. Stir in milk and sugar and cook uncovered over medium heat for 30-40 minutes, stirring frequently--especially towards the end of cooking.
  4. The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency.
  5. DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.
  6. Remove from heat and stir in vanilla.
  7. Turn into a bowl or cups.
  8. You can sprinkle cinnamon on the top if you like.
  9. COVER with plastic wrap directly on surface "IF" you don't want a skin.
  10. COOL.

Rolo Turtles




Preheat oven 200 degrees
1. Line cookie sheet with the pecans, pick the best ones.  Toast in oven for 2 minutes.
2. Line a cookie sheet with Snyder's Butter Snaps.
3. I used the mini Rolo's because they are already unwrapped.   I put two Rolo's on some of the  pretzel's to see if it made a big difference.  I thought they were both great, my son like the pretzel   with 2 Rolo's.  I also tried Milky Ways...I probably won't do that again.
    4. Put them in the oven for 3 to 4 minutes, they will be soft because they are melting.
    5. As soon as you take them out of the oven press a pecan half into the center of the Rolo. 

Orange Juice

We go see Sue most Easter's and when we do she has Ranger cookies and her special drink.  My boys have named it Sue's Special Drink.  They love the layered colors and refreshing taste. 


Ingredients:
Orange juice
Cranberry juice
Ginger Ale

Directions:
Put a few ice cubes in a glass then fill it half way with orange juice, then a quarter Cranberry juice, and the last quarter Ginger ale.  Don't stir.

Brownies

Ingredients

  • 2 sticks (1/2 pound) unsalted butter
  • 4 ounces unsweetened chocolate, coarsely chopped
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1 cup pecans (4 ounces), coarsely chopped
How to Make It
Step 1    

Preheat the oven to 350°. Butter and lightly flour a 9-by-13-inch baking dish. In the top of a double boiler, melt the butter with the chocolate; let cool.
Step 2    

Meanwhile, in a large bowl, beat the eggs with the granulated sugar and brown sugar until thickened; beat in the vanilla. Using a rubber spatula, gently fold in the chocolate mixture until combined. Sift the flour over the batter and fold it in. Fold in the pecans.
Step 3    

Pour the batter into the prepared pan and bake for about 25 minutes, or until a tester inserted in the center comes out with moist crumbs attached. Let the brownies cool in the pan for 1 hour before

I didn't have butter so I used margarine.  I won't do that again.  At my sons suggestion I sprinkled 1tsp coffee grinds in the brownie mix.  It tasted good.

French Toast casserole

Recipe adapted from Genius Kitchen

1/2 Cup Butter
1 to 1 1/2 Loaf of French bread or 12 slices of bread
1/2 Cup Brown sugar
1/2 Cup Sugar
1 teaspoon vanilla
6 eggs
1/2 cup milk
1 cup heavy cream
1 teaspoon cinnamon

Melt butter in baking dish.  In a bowl beat together the rest of  ingredients except bread.  Slice the French bread and place the slices on top of the butter, make it a tight fit.  Sprinkle a little cinnamon on top of the bread. Pour the egg mixture on top of the bread, you might need to flip the bread to make sure each side is coated with the egg mixture.  Cover and refrigerate over night.  Bake at 350 for 30 to 45 minutes.
